The Westin Chosun Seoul’s Chinese restaurant, Hong Yuan, presents “The Genial Air of Spring” from March 2 through March 31, 2015. The price of lunch is KRW136,000 per person and dinner is KRW185,000 per person (inclusive of service charge and tax). Hong Yuan’s spring set menus require a minimum order of two persons.

“The Genial Air of Spring” lunch menu includes special cold dishes for spring, shrimp spring rolls, steamed bean curd, vegetables and truffle with crab meat sauce, braised abalone with edible shoots of a fatsia, sautéed beef with Chinese hot sauce, spicy noodle soup with shepherd’s purse and baby octopus, and dessert. The dinner menu includes special cold dishes for spring, shrimp spring rolls, Buddha jumps over the wall with truffle, braised sea cucumber and abalone with edible shoots of a fatsia, steamed lobster with garlic sauce, sautéed beef with Chinese hot sauce, spicy noodle soup with shepherd’s purse and baby octopus, and dessert.

Shepherd’s purse and edible shoots of a fatsia are full of nutrition, including protein, vitamin A, vitamin C and calcium. Consuming spring herbs will be an ideal remedy for lethargy, fatigue in springtime. One of the dishes on the spring set menus, the braised abalone with edible shoots of a fatsia, is a well-balanced combination of tender and juicy abalone braised in oyster sauce with parboiled aromatic edible shoots of a fatsia garnish. An excellent hearty flavored spicy noodle soup with shepherd’s purse and baby octopus is made with clam broth and the Chungyang red pepper (a small-sized chili pepper). According to Donguibogam (Principles and Practice of Eastern Medicine), shepherd’s purse is used for blurred vision and it is also used for supplying blood to the liver. A silky-smooth steamed bean curd, vegetables and truffle with crab meat sauce will surely satisfy elderly people’s taste buds.

Hong Yuan has been introducing dishes full of creative tastes since they joined the partnership with a two-star Michelin restaurant Fureika. One of the dishes on the spring set menus, shrimp spring rolls is made with the same spring roll wrappers as Fureika. Fureika has gained an outstanding reputation among prominent figures not only in Japan, but also in Korea and China.
